Good Food, Good Life, 365 – Blood Orange Breakfast Parfait

Blood Orange Breakfast Parfait

1 serving

1/2 – 3/4 cup Greek yogurt, plain, vanilla or hone

1/3 – 1/2 cup cooked quinoa, chilled

1 blood orange, peeled and sliced

Juice of 1 blood orange

handful of toasted pecans

drizzle of honey

  1. Layer ingredients however you like.
  2. Top with fresh blood orange juice and honey.
  3. If this is a breakfast to go, cover tightly and chill until eating time.

 

Sue’s tip:

This is a gluten-free breakfast.
To cook quinoa, rinse and drain 1 cup of uncooked quinoa. Put drained quinoa in a pot with
1 2/3 cups water. Bring to a boil. Reduce heat, cover and cook until quinoa is tender, about 15 to 20 minutes. All water should be cooked away. Set pot aside for 5 minutes. Transfer quinoa to a covered container and refrigerate. Leftover quinoa will keep in refrigerator for a week. Use in salads, serve as a side dish, stir into soup.
