Veggie Roll-Ups To Go

For each serving:

1 whole wheat tortilla

hummus, homemade or purchased

red bell pepper, cut into sticks

orange bell pepper, cut into sticks

green pepper, cut into sticks

carrot, cut into thin sticks

red onions, chopped, optional
avocado, sliced

fresh spinach leaves, rinsed and spun dry

sunflower seeds

 

Lay tortilla on work surface. Spread tortilla generously with hummus. Lay red pepper sticks along the edge nearest you. Continue arranging ingredients, moving closer to the other edge with each one. Sprinkle all with sunflower seeds. Starting with edge nearest you, roll the tortilla as tightly as possible. Cut off each end. Slice into 1-inch wide roll-ups. Pack into a container for your lunch bag or eat immediately.

Sue’s Tip

Adding leftover vegetables, such as roasted cauliflower, steamed green beans or roasted broccoli create more deliciousness in your roll-ups.
