Combine ground graham crackers, raisins, honey and peanut butter in large mixing bowl. Roll dough into 16 balls. Pat to flatten. Press tops of cookies lightly in coconut. Makes 16 cookies.
Grind graham crackers in food processor or blender. Children can place the 8 graham cracker squares in a large zip-top bag. Seal well. Roll over the crackers with a rolling pin until very fine crumbs are formed.
Chocolate chips are a great substitute for raisins. Any dried fruit can be used.
